I had seen these posted on Facebook at one time and printed off the recipe for when the grandkids came over to try because, of course. they all like corn dogs. I knew they were coming over last night, so decided it would be a good night to try them. I actually had the two grandgirls make them..trying to teach them how to cook a little when they come over now. They did a good job, one loading the mini muffin pans and the other putting in the hot dog pieces etc..they liked them a lot, well Kyle mainly ate the hotdogs inside, but the girls ate like 7 each, they said, and loved them. I had also gotten some honey mustard salad dressing and they were awesome with that on them..the girls said so too. They would make a great appetizer for a party/pot luck, but kids like them anytime I would guess.
MINI CORN DOG MUFFINS:
1 pkg Jiffy or similar corn muffin mix mixed as directed on pkg.
2 oz Velvetta, cut in 24 tiny cubes (optional)
4 beef franks, each cut into 6 pieces..next time I will get the fat style hotdogs so there is more meat in them.
honey mustard (they suggested grey poupon honey mustard, I used the dressing)
Heat oven to 375 degrees. prepare muffin mix and spoon into 24 mini muffin pan cups sprayed well with cooking spray.
press 1 Velvetta cube and hot dog slice into batter in center of each muffin cup.
Bake 10-12 minutes or until golden brown. COOL 5 min before removing from pans. Serve warm with mustard.
